Today I got a very nice surprise when one of my coworkers stumbled upon a perfect specimen of a Chicken of the Woods Mushroom. This mushroom can be found across the United States and is always an amazing ingredient to incorporate into your meals. A unique property of Chicken of the Woods is that it actually has a fairly similar texture to chicken when cooked. This being said, I would strongly recommend that you do not eat this mushroom raw as some people do have negative reactions to it when eating it raw, which in worst cases will cause you to have an upset stomach. This recipe I have concocted is a simple, but delicious way to enjoy this mushroom and if you are not a fan of buffalo sauce you can choose to skip the sauce step and just enjoy them with their savory beer-battered crust.

Buffalo Chicken of the Woods Mushroom wings recipe

Ingredients

Beer Batter

  • 1/2 lb of Chicken of the Woods Mushrooms; 1-2 inch Cubes
  • 1 Cup of White Flour
  • 1 Tbsp. Corn Starch
  • 1 Tbsp. Tony's Cajun Seasoning
  • 1/2 Tbsp. Garlic Powder
  • 1/2 Tbsp. Onion Powder
  • 1 Can of Southern Prohibition Light American Lager or Any other American Lager/Light Beer
  • 5 cups of Peanut or Canola Oil

Sweet Buffalo Sauce

  • 1 Stick of Salted Butter
  • 1 Cup of Frank's Red Hot Sauce
  • 2-4 Tbsp. Honey (Add More or Less Honey Depending on your Sweetness Preference)

BBQ Chicken of the Woods Mushroom Breakfast Sandwich

Instructions

  1. Begin by preparing your oil by placing it in a deep set cast iron pan or pot and heating it to a temperature of 375 degrees Fahrenheit.
  2. Next, prepare your beer batter by mixing your flour, cornstarch, Tony's, garlic powder, and onion powder together in a bowl thoroughly. Next slowly add in your can of beer and mix thoroughly to prevent clumps from forming in your batter.
  3. On a separate plate, add a 1/4 of a cup of flour that you will use as a base before you place your mushrooms into the beer batter.
  4. Finally, add your butter, hot sauce, and honey into a sauce pan that is on medium-low heat and mix them thoroughly and allow these ingredients to mix in together.
  5. Now we begin to prepare your "chicken wings" by lightly coating your mushroom cubes in the dry flour and then dipping them into the beer batter. Next, add them to your oil and cook them for 4-5 minutes or until they reach their golden brown color. Place your fried mushrooms onto a paper towel covered plate once they are done and then when they have cooled off you can toss them in some sauce using a large bowl.
  6. Finally, Plate your "wings" and garnish them with some celery and ranch and enjoy!
