Beer and beef broth add great flavors to any stew. A dark brew can have roasted grains, where an IPA will focus on hops. Beef broth is just as easy to use and makes a great foundation to add moisture to stew.
Stew can be built on the stove in a Camp Chef Dutch oven, or heavy-walled pot. A crockpot does a great job, if you don’t overcook the vegetables. An Instant Pot makes stew in under an hour with the taste and texture of properly stewed meat.
Stewing is defined as “a combination cooking method that uses small, uniform pieces of meat that are totally immersed in liquid and slowly simmered. In this case, the food and the liquid are served together as one dish.”

1 ½ lbs venison stew meat
2 Tbsp canola oil
3 yellow or red potatoes, cubed
2 cups cremini mushrooms, sliced
2 ribs celery, sliced ½ inch thick
3 large carrots, sliced ½ inch thick
3 parsnips, diced large
1 large turnip, diced large
1 yellow onion, diced large
1 tsp dried oregano
1 tsp dried thyme
1 tsp dried rosemary
1 tsp savory
1 bay leaf
1 tsp salt
½ tsp freshy ground pepper
1 cup beef broth
4 oz tomato paste
1. Heat oil in a Dutch oven and add the stew meat. Season with salt and pepper. Brown on all sides.
2. Add the potatoes, mushrooms, celery, carrots, parsnips, turnips, onion, oregano, thyme, rosemary, savory, bay leaf, salt, and pepper.
3. Pour beer and broth over the ingredients and bring to a simmer. Cover and cook 45 minutes.
4. Remove and discard bay leaf and add the tomato paste. Stir well and return to a simmer for 5 minutes to thicken.
