  • 1 lb Back Strap
  • 1 Cup Worcestershire
  • 1/4 Cup Soy Sauce
  • 1 Cup Zesty Italian Dressing
  • 1 Tablespoon onion POWDER (not salt)
  • 1 Tablespoon Garlic POWDER (not salt)
  • 1 teaspoon Sugar
  • Candy Jalapenos/Cowboy Candy Sliced (can substitute)
  • Cajun Seasoning (Choose one less salty)


Great Appetizers!!! This recipe is made for 1 lb of chunks. Cut the meat into 1 inch squares. Marinate in Zesty Italian dressing at least 1 hr, I like to leave them in the Frig overnight. Pour off "ALL" marinade!! Season to taste with cajun seasoning to taste, choose one that is less salty, as the Worcestershire & Soy sauce provide a LOT of SALT! Add Onion Powder and Garlic Powder. Massage the seasoning into the meat. Add Worcestershire & soy sauce, stir to cover, put in small container with a tight fitting lid that will allow you to shake and turn while marinating. Put in Frig for at least 1 hour or longer, the mo the better! Place 1-2 slices of jalapenos on each chunk, wrap in bacon and secure with a toothpick. You can usually cut the bacon in half, or thirds and stretch it across the chunk. Grill over medium heat for 15-25 minutes, It is easy to OVER COOK so be very careful, they are small chunks!! Serve warm right away! Give me some credit! :)Serves 4-6
