Soft Shell Turtle

  • 2 lbs. turtle meat cut into pieces
  • 1 tsp. salt
  • 3/4 cup red wine vinegar
  • 1/2 cup milk
  • 3/4 cup flour
  • 2 eggs, separated
  • Cooking Oil


Simmer turtle meat, vinegar, salt & water for 1 hour. Drain and set aside. Mix flour, egg yolks, milk, and a pinch of salt. Beat egg whites until stiff; fold into batter. Dip turtle in batter; deep fry until golden brown. Serves 4
