I have had bear meat alot of ways and i will be honest with you the best way is make a good stew and let it slow cook. bear meat is usually very greasy. you may want to try and do some on a stick with veggies over an open fire. welcome to mossy oak

Welcome. I have only had bear a few times and agree that slow cooking for a stew is one of the best ways to prepare it. I have also had a good bologna. I do not have a recipe, though.

Bear is richer fattier meat than venison. I don't have specific recipes handy, but generally have had best luck with slow cooking, crock-pot style, and with bar-b-que and stews and chilies. When field dressing your bear, take care to get as much fat off the carcass as you can when skinning, and when butchering the meat also. The fat is strong and adds a lot of sometimes unwanted flavor, and will go rancid quickly also. Check out your local library in the game, hunting and cooking sections, they usually have some good recipe books for game there.
Sorry, I'm new here too. Welcome aboard.

Welcome to the forum!
It tastes good made up as breakfast sausage. Sorry I don't have a recipe as we had a local butcher mix it up. I think he added something like 25% pork in it.

I love some bear chops on the grill. Make sure all the fat is trimmed off. Season with some Cajun seasoning I also like to use a good dry rub what ever you would use on red meat. I like Tony's grill to medium and enjoy with some fresh corn on the cobb and a good beer.

| Cook bear meat just like you would pork and you won't go wrong. Love those bear roasts. I usually make the roast cuts, cube up some for stew and grind the rest. Makes good burger and sausage. Don't eat it rare, make sure its at least med well. Enjoy....
