I don't know what you mean by in a big way, but I use real birds at least once a week. I am in the process of building a bird pen, so for now they are mostly frozen.

As soon as i started with retrieving dummies i added a duck wing, and a grouse wing( dont remember exact age)

I dont use conventional training
I got my pup flushing grouse and turkeys bfore he new his name the second day i had him im driving down the road and see a flock of turkeys so i grab the pup and ran out in the woods and drop him he had his nose to the ground and found some feathers in no time. over that first summer i did that probabaly 15 times w/ turkeys and grouse this started a fire in him he loves birds.
But this might not be a good idea when it came to retrieving i had to work extra hard to stop him from breaking.

Me and my buddies worked all that summer with dummies and frozen ducks
I sit in the blind w/ the pup and gun they throw the dummies i shoot everything was looking good the dog wouldnt move till i said

first september goose hunt here comes a flock wings set just about to take em and the dog is out of the blind running straight towards them before we even got a shot off

between the noise(Which i never added to training) and the site of the birds and his desire to flush he got a little to excited

o well i put a leash on him and worked harder i took him and sat down in the blind just watching geese fly in(after season)

it worked for the most part his first duck hunt went good no jumping but when geese are coming in he starts whinning and shaking and he brakes on the gun shot he is fine with ducks

i guess i got off subject a littl but thats an experience i had

Mine handled her first bird at 10 weeks. I try to throw her some live or fresh birds on a regular basis.

what age do guys start introducing real birds to your pups ?

I was able to get my 4 year old male to start around 8 months old on real birds. but my new pup looks like it will be a little sooner.
