Ingredients:
1 wild turkey - boneless, skinless breast halves
buttermilk
3 cups flour
1 T. cajun seasoning
2 cups shortening
Instructions:
Cut turkey breast 1-inch thick. Tenderize with meat mallet. Pour buttermilk over meat. Cover and refrigerate 4 to 6 hours. Remove turkey and discard buttermilk. Mix flour and seasoning. Dredge each piece in flour. Fry in skillet until golden brown.
