Creole Fillets

Ingredients:
2 lbs. fish fillets
1 cup onion, chopped
1 clove garlic, minced
1 cup green pepper, chopped
2 lb. can diced tomatoes
3 T. oil
2 bay leaves
1 1/2 tsp. salt
Dash of cayenne pepper
Instructions:
Cook onions, garlic and green pepper in oil until tender. Add tomatoes, bay leaves, salt and pepper. Simmer for 30 minutes. Place fish in baking pan and sprinkle with salt and pepper. Pour tomato mixture over fish and bake @ 350°F for 45 minutes.
